This Vegan Pancake recipe is recommended by our Business Manager Anna, as it is a tasty dish, which is quick and easy to make even if you have a one year old crawling or running around!
Ingredients
200gmixed frozen berries (in winter)- pick and use fresh berries in summer!
1tbspicing sugar
squeezeof lemon juice
150gplain flour
2tbspcaster sugar
2tspbaking powder
pinchof salt
dashof vanilla extract
150mlalmond milk
2tspvegetable oil
Instructions
Tip the flour, caster sugar, baking powder and salt into a bowl, and mix. Pour in the vanilla and almond milk, and whisk.
Heat a frying pan with 2 tsp of oil. Add a heaped tbsp of batter to the pan and cook the pancakes in batches for 3-4 minutes on each side.
In summer add the berries on top; in winter you can make a quick compote out of the mixed berries by tipping them into a small pan with the icing sugar and lemon juice, and cook for 5-10 minutes or until saucy.
Serve the pancakes with the compote or fruit as you wish!
